This isn’t custard. This isn’t Philly-style. This isn’t gelato. This is dondurma. Our founder was inspired by the ice cream traditions of Turkey’s Black Sea coast area Bafra, Samsun. We don’t use cream or fillers. Just whole milk, gently reduced to unlock its natural richness and forming its own cream the old-fashioned way. Salep, a flour made from wild orchid root from Turkey’s mountains. It gives the ice cream its natural elasticity, chewiness, and rich depth. No artificial flavors. No additives. Just real ingredients and patient churning. Because Chicago deserves something iconic. Deep-dish. Hot dog. Now ice cream.
